Instructions

  1. In a large bowl, mix together the creamy peanut butter, unsalted butter, vanilla extract, powdered sugar, and salt until well combined.
  2. Shape the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  3. Place the baking sheet in the refrigerator and let the peanut butter balls chill for about 30 minutes.
  4. In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable shortening.
  5. Microwave the chocolate mixture in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth.
  6. Using a toothpick or a fork, dip each chilled peanut butter ball into the melted chocolate, leaving a small portion of the peanut butter exposed to resemble a buckeye.
  7. Place the chocolate-covered peanut butter balls back on the baking sheet and refrigerate for an additional 30 minutes, or until the chocolate is set.
  8. Once the chocolate has hardened, remove the buckeye candies from the refrigerator and store them in an airtight container.
  9. Serve and enjoy!
