Ingredients
Instructions
-
Preheat the oven to 400°F (200°C). In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
-
Cut the cold butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
-
Gently fold in the cranberries and orange zest.
-
In a separate bowl, whisk together the orange juice, heavy cream, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
-
Turn the dough out onto a lightly floured surface and knead it gently a few times until it comes together. Pat the dough into a circle about 1-inch thick.
-
Use a round biscuit cutter to cut out mini scones and place them on a baking sheet lined with parchment paper.
-
Bake for 12-15 minutes or until golden brown.
-
While the scones are baking, prepare the glaze by whisking together the powdered sugar and orange juice until smooth.
-
Remove the scones from the oven and let them cool for a few minutes. Drizzle the glaze over the warm scones.
-
Serve and enjoy!
