Add the broccoli, reduce heat to low, cover, and simmer for 15 minutes, or until the broccoli is tender.

Use an immersion blender or transfer the soup to a blender, and blend until smooth.

Return the soup to the pot, and stir in the cheddar cheese until melted and smooth.
