Heat a non-stick skillet over medium heat and melt one tablespoon of butter. Pour pancake batter onto the skillet to form four pancakes. Cook for 2-3 minutes on each side or until golden brown. Set aside.

In the same skillet, cook the bacon until crispy. Set aside.

Assemble the sandwich by placing a pancake on a plate, followed by a slice of cheddar cheese, two bacon strips, and another pancake on top. Repeat for the second sandwich.
