Butternut squash is a good source of vitamin A, vitamin C, and potassium.

This is vegetarian and gluten free recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

  1. Preheat the oven to 200°C.
  2. Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves on a baking sheet, drizzle with olive oil, and sprinkle with salt, black pepper, and paprika.
  3. Roast the squash in the preheated oven for 30-40 minutes, or until tender.
  4. Meanwhile, heat a teaspoon of olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  5. Add the spinach to the pan and cook until wilted. Remove from heat.
  6. Once the roasted squash is cool enough to handle, scoop out the flesh and transfer it to a bowl. Mash the squash with a fork.
  7. Add the sautéed onion, garlic, and spinach mixture to the mashed squash. Crumble in the feta cheese and mix well.
  8. Transfer the mixture back into the hollowed-out squash shells. Top with bread crumbs.
  9. Return the stuffed squash to the oven and bake for an additional 10 minutes, or until the bread crumbs are golden brown.
  10. Let the squash rest for 5 minutes before serving. Enjoy!
