  1. Preheat the oven to 325°F (165°C).
  2. In a saucepan, heat the heavy cream, 1/4 cup of granulated sugar, and vanilla extract over medium heat until hot but not boiling.
  3. In a separate bowl, whisk the egg yolks with the remaining 1/4 cup of granulated sugar until well combined.
  4. Slowly pour the hot cream mixture into the egg yolks while whisking continuously.
  5. Strain the mixture through a fine-mesh sieve into a pouring jug.
  6. Divide the mixture evenly among four ramekins.
  7. Place the ramekins in a baking dish and pour hot water into the dish until it reaches about halfway up the sides of the ramekins.
  8. Bake for 35-40 minutes or until the custard is set but still slightly jiggly in the center.
  9. Remove the ramekins from the water bath and let them cool to room temperature.
  10. Once cooled, cover the ramekins with plastic wrap and refrigerate for at least 2 hours or overnight.
  11. Just before serving, sprinkle about 1/2 tablespoon of granulated sugar evenly over the surface of each custard.
  12. Use a kitchen torch to caramelize the sugar until golden and bubbly.
  13. Let the caramelized sugar harden for a few minutes before serving.
