Preheat the oven to 375°F (190°C).

In a bowl, mix the peaches, bourbon, and 1/4 cup of white sugar. Set aside to macerate for 10 minutes.

In a separate bowl, mix the flour, remaining white sugar, butter, and salt until crumbly.

On a floured surface, roll out the dough and cut it into small circles to fit into a muffin tin.

Press the dough circles into the muffin tin.

Spoon the macerated peaches into each tartlet.

In a small bowl, beat the egg with water to make an egg wash. Brush the edges of the tartlets with the egg wash.
