  2. Roll out the puff pastry sheets and cut into 6 equal squares.
  3. Boil the baby potatoes until tender, then drain and cut into halves.
  4. In a pan, sauté the onion and garlic in olive oil until translucent.
  5. Add the halved baby potatoes to the pan and season with salt and black pepper.
  6. Cook for 5 minutes, stirring occasionally.
  7. Place a spoonful of the potato mixture onto each puff pastry square.
  8. Sprinkle with grated Parmesan cheese and fresh parsley.
  9. Fold the corners of the puff pastry squares towards the center to form a package.
  10. Place the packages on a baking sheet and bake for 15 minutes or until golden brown.
  11. Serve hot.
