Blueberry Vanilla Pancakes
Blueberries are often referred to as a ‘superfood’ due to their high antioxidant content.
This is vegetarian recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

In a large bowl, whisk together the flour, baking powder, salt, and sugar.

In a separate bowl, beat the egg. Then add the milk and vanilla extract, and whisk until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Gently fold in the blueberries.

Heat a non-stick skillet or griddle over medium heat and melt a small amount of butter.

Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.

Repeat with the remaining batter, adding more butter to the skillet as needed.

Serve the pancakes hot with maple syrup.
