Blueberry, Raspberry and Blackberry Cheesecake

Preheat the oven to 325°F (163°C).

In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.

In a separate mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition.

Gently fold in the blueberries, raspberries, and blackberries. Pour the mixture over the crust in the springform pan.

Bake for 55-60 minutes, or until the center is set.

Remove from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake from the pan.

Refrigerate for at least 2 hours, or overnight, to allow the cheesecake to set.

Serve chilled with a dollop of whipped cream on top.
