Blueberries are often referred to as a ‘superfood’ due to their high levels of antioxidants.

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, mix together the melted butter and sugar until well combined. Add the egg and mix until smooth.

Stir in the milk, lemon juice, and lemon zest.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Gently fold in the blueberries.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
