Blueberry Crumble Bars
Blueberries are often referred to as a ‘superfood’ due to their high antioxidant content.

Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan.

In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Add the egg and vanilla extract to the mixture and mix until well combined.

Press half of the mixture into the prepared baking pan.

In a separate bowl, mix the blueberries, cornstarch, lemon juice, brown sugar, and cinnamon. Spread the blueberry mixture evenly over the crust in the baking pan.

Sprinkle the remaining crumb mixture over the blueberry layer.

Bake in the preheated oven for 40 minutes, or until the top is golden brown.

Allow to cool completely in the pan on a wire rack.

Cut into bars and serve.
