Preheat the oven to 375°F (190°C).

In a large skillet, brown the ground beef over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.

Stir in the frozen mixed vegetables and cook for an additional 2 minutes.

Add the cream of mushroom soup, sour cream, salt, and black pepper. Stir until well combined.

Transfer the mixture to a greased casserole dish.

Arrange the tater tots in a single layer on top of the mixture.

Sprinkle shredded cheddar cheese evenly over the tater tots.

Bake for 30-35 minutes, or until the tater tots are golden brown and the casserole is heated through.
