Add the artichoke hearts and cook for another 2 minutes. In a greased baking dish, layer half of the sweet potato rounds. Spread half of the artichoke mixture over the sweet potatoes. Sprinkle half of the grated Gruyere cheese on top. Repeat the layers with the remaining sweet potatoes, artichoke mixture, and Gruyere cheese. In a separate bowl, mix together the heavy cream, salt, and black pepper. Pour the mixture over the gratin. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the top is golden and bubbly. Let the gratin rest for 10 minutes before serving.
