In a bowl, mix together the black beans, corn kernels, cream cheese, cheddar cheese, Monterey Jack cheese, minced garlic, salt, black pepper, cilantro, and lime juice.

Place a spoonful of the mixture onto a wonton wrapper. Fold the wrapper in half diagonally to form a triangle and press the edges to seal.

Heat olive oil in a frying pan over medium heat. Fry the wontons until golden brown and crispy on both sides.

In a separate pan, sauté the sweet peppers with minced garlic until softened.

Transfer the sautéed sweet peppers to a blender and blend until smooth. Add salt and black pepper to taste.

Serve the black bean and corn wontons with the 3 cheese sweet pepper sauce on the side.
