Bistro Beet Burgers
Beetroot is not only a vibrant and flavorful ingredient but it is also packed with essential nutrients like fiber, folate, and potassium.

Preheat the grill or heat a pan over medium heat.

Peel and grate the beetroot. Place it in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, combine the grated beetroot, cooked quinoa, mashed black beans, finely chopped onion, minced garlic cloves, breadcrumbs, egg, salt, and black pepper. Mix well until all the ingredients are evenly combined.

Shape the mixture into patties of desired size.

Brush the patties with olive oil on both sides.

Grill the patties for about 4-5 minutes on each side, or until they are browned and cooked through. If using a pan, cook the patties for about the same amount of time.

While the patties are cooking, lightly toast the burger buns.

Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a beet burger patty, tomato slice, red onion slice, and pickles. Top with the other half of the bun.
