Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Beat in the egg yolks and vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Shape the dough into small balls and roll them in the shredded coconut.

Place the balls on the prepared baking sheet and use your thumb to make an indentation in the center of each ball.

Fill each indentation with a small amount of jelly or jam.
