Preheat the oven to 375°F (190°C).

Roll out the pie crust and place it into a 9-inch pie dish.

In a bowl, mix the rhubarb, sugar, and cornstarch until well combined.

Pour the rhubarb mixture onto the pie crust.

In another bowl, whisk together the heavy cream, egg yolks, and vanilla extract.

Pour the cream mixture over the rhubarb.

Bake in the preheated oven for 40 minutes, or until the crust is golden and the filling is set.
