  2. Roll out one pie crust and place it in a 9-inch pie dish.
  3. In a mixing bowl, combine the cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until well coated.
  4. Pour the cherry mixture into the pie crust.
  5. Dot the top of the cherries with small pieces of butter.
  6. Roll out the second pie crust and cut it into strips.
  7. Create a lattice pattern on top of the pie by weaving the strips over and under each other.
  8. Trim any excess crust and crimp the edges to seal.
  9. In a small bowl, beat the egg with milk to make an egg wash.
  10. Brush the egg wash over the lattice crust.
  11. Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
