  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, beat together the brown sugar, oil, eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the grated carrots, grated apple, crushed pineapple, shredded coconut, chopped walnuts, and raisins.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely.
