Slowly pour in the vegetable broth while stirring constantly. Bring to a simmer.

Add the broccoli to the pot and let it cook until tender, about 10 minutes.

Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.

Return the soup to the pot and stir in the milk and heavy cream. Season with salt and black pepper.

Simmer for another 5 minutes, then stir in the cheddar cheese until melted.
