Beet Chocolate Cake
Beets are a natural food coloring agent and give this cake a rich, vibrant color.

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Cook the beets until tender, then puree them in a blender or food processor.

In a medium bowl, combine the flour, cocoa powder, baking powder, and salt.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Mix in the beet puree, followed by the dry ingredients, alternating with the buttermilk. Fold in the chopped dark chocolate.

Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
