BBQ Watercress Pesto Burgers

In a food processor, combine watercress, garlic, pine nuts, Parmesan cheese, olive oil, lemon juice, salt, and black pepper. Blend until smooth to make the watercress pesto.

Preheat the grill to medium-high heat.

In a mixing bowl, combine ground beef with 2 tablespoons of the watercress pesto. Mix well and shape into 4 patties.

Grill the burgers for about 4-5 minutes per side, or until cooked to your desired doneness.

During the last minute of grilling, toast the hamburger buns on the grill.

Remove the burgers and buns from the grill. Let the burgers rest for 5 minutes.

Assemble the burgers by spreading the remaining watercress pesto on the bottom half of each bun. Top with a lettuce leaf, tomato slice, burger patty, red onion slice, and the top half of the bun.
