Banana Pudding Cupcakes
Banana pudding is a classic Southern dessert that originated in the United States. It is often made with layers of vanilla pudding, sliced bananas, and vanilla wafers. This recipe puts a twist on the traditional dessert by turning it into cupcakes!

Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, mashed bananas, and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix until just combined.

Fill each cupcake liner about 2/3 full with the batter. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

While the cupcakes are baking, prepare the instant vanilla pudding according to package instructions.

Once the cupcakes are baked, remove them from the oven and let them cool for a few minutes in the tin. Then transfer them to a wire rack to cool completely.

Once the cupcakes are cooled, use a small knife to cut a hole in the center of each cupcake. Fill the holes with the prepared vanilla pudding.

Top each cupcake with a dollop of whipped cream and garnish with banana slices.
