Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg.

Mash the ripe bananas and add them to the butter mixture. Mix well.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Stir in the vanilla extract.

Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

In a chilled bowl, whip the heavy cream until soft peaks form. Add the powdered sugar and banana extract, and continue to whip until stiff peaks form.

Once the cupcakes are completely cooled, pipe or spread the banana cream on top of each cupcake.
