Preheat the oven to 325°F (160°C).

In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.

In a separate large bowl, beat the cream cheese and granulated sugar until smooth. Add mashed bananas, sour cream, and vanilla extract, and mix well.

Add eggs one at a time, beating well after each addition. Gradually add flour and mix until just combined.

Pour the batter into the prepared crust. Smooth the top with a spatula.

Bake for 60-70 minutes or until the center is set and the top is golden brown.

Turn off the oven, leave the cheesecake in for an additional hour with the door slightly ajar.

Remove from the oven and cool completely. Refrigerate for at least 2 hours or overnight.
