Baked French Onion Soup
French onion soup is believed to have originated in ancient Rome, where onions were plentiful and often used in cooking.

Preheat the oven to 400°F (200°C).

Slice the onions into thin strips.

In a large pot, melt the butter over medium heat. Add the onions and cook until caramelized, stirring occasionally, for about 30 minutes.

Add the beef broth, white wine, thyme, bay leaves, salt, and black pepper to the pot. Bring to a simmer and cook for another 15 minutes.

While the soup is simmering, slice the baguette into 1-inch thick slices.

Ladle the soup into oven-safe bowls. Place a few slices of baguette on top of each bowl.

Sprinkle grated Gruyere cheese over the bread slices.

Place the bowls on a baking sheet and bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let the soup rest for a few minutes before serving.
