Baked Cheddar and Tomato Rice
The combination of cheddar cheese, tomatoes, and rice brings together flavors from both American and Italian cuisines.

Preheat the oven to 375°F (190°C).

Cook the rice according to package instructions and set aside.

In a large pan, heat olive oil over medium heat. Add diced onion and minced garlic. Cook until translucent.

Add diced tomatoes, dried oregano, salt, and black pepper to the pan. Cook for 5 minutes.

In a 9x13-inch baking dish, combine cooked rice, tomato mixture, and grated cheddar cheese. Mix well.

Sprinkle grated Parmesan cheese on top.

Bake in the preheated oven for 20-25 minutes, until the cheese is melted and golden.

Remove from the oven and let it rest for 5 minutes.

Garnish with fresh parsley and serve hot.
