Preheat the oven to 375°F (190°C).

Thaw the puff pastry sheets according to the package instructions.

Wash the apples, slice them in half, remove the cores and thinly slice them.

In a bowl, combine the apple slices, lemon juice, granulated sugar, and cinnamon powder. Mix well.

Microwave the apple mixture on high for 2 minutes to soften the slices.

Roll out the puff pastry sheets and cut them into long strips.

Spread apricot jam on each strip of pastry.

Place the apple slices on the pastry, overlapping them slightly, and leaving the curved edge of the slices exposed.

Fold the bottom part of the pastry over the apple slices.

Roll up the pastry strip tightly to form a rose shape.

Arrange the apple roses in a greased baking dish.

In a small bowl, mix apricot jam and water. Brush this mixture over the apple roses.
