Avocado Stuffed Portobello Mushrooms
Portobello mushrooms are actually mature cremini mushrooms and are known for their meaty texture and earthy flavor.

Preheat the oven to 375°F (190°C).

Remove the stems from the Portobello mushrooms and scrape out the gills.

In a bowl, mash the avocado and mix in the cherry tomatoes, red onion, balsamic vinegar, olive oil, garlic, basil, salt, and black pepper.

Fill each mushroom cap with the avocado mixture.

Place the mushrooms on a baking sheet and bake for 20 minutes.

Remove from the oven and let them rest for 5 minutes.
