Jalapeno Cheese Shortbread

In a large bowl, combine the all-purpose flour, salt, and black pepper.

Cut the cold unsalted butter into small cubes and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.

Stir in the grated cheddar cheese and finely chopped jalapeno pepper.

Knead the dough gently until it comes together. Be careful not to overwork the dough.

Shape the dough into a log and wrap it in plastic wrap. Chill in the refrigerator for 30 minutes.
