French Onion Soup is believed to have originated in ancient Rome, where onions were a staple ingredient and often used in soups.

Slice the onions thinly.

In a large pot, melt the butter and olive oil over medium heat. Add the onions and cook until caramelized, stirring occasionally.

Sprinkle the flour over the onions and stir well to coat.

Pour in the beef broth and white wine. Add the bay leaf and thyme sprigs. Bring to a simmer and let cook for 30 minutes.

Preheat the oven to 350°F (175°C).

Ladle the soup into oven-safe bowls. Top each bowl with a slice of French baguette and sprinkle with grated Gruyere cheese.

Place the bowls on a baking sheet and bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let rest for 10 minutes before serving.
