  1. In a mixing bowl, combine the all-purpose flour and granulated sugar. Cut the unsalted butter into small pieces and add it to the bowl. Use your hands to rub the butter into the flour mixture until it resembles breadcrumbs.
  2. Add the egg yolks, lemon zest, and vanilla extract to the bowl. Mix everything together until a dough forms.
  3. Divide the dough into two equal portions and shape each portion into a disc. Wrap them in plastic wrap and refrigerate for 30 minutes.
  4. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  5. Roll out one disc of dough on a lightly floured surface to a thickness of about 3mm. Use a round cookie cutter to cut out circles from the dough.
  6. Place a teaspoon of apricot jam in the center of each circle. Fold the edges of the circle over the jam, forming a wreath shape. Press the edges lightly to seal.
  7. Transfer the jam wreaths to the prepared baking sheet. Repeat the process with the remaining dough and jam.
  8. Bake in the preheated oven for 12-15 minutes, or until the wreaths are golden brown.
  9. Remove from the oven and let cool on a wire rack.
  10. Dust the jam wreaths with powdered sugar before serving.
