Asparagus, Mushroom and Red Pepper Strudel

Preheat the oven to 180°C (350°F).

Trim the asparagus and cut into 2-inch pieces. Slice the mushrooms and red pepper.

Heat the olive oil in a pan over medium heat. Add the garlic and sauté for 1 minute.

Add the mushrooms and red pepper to the pan and cook for 5 minutes, until softened.

Season with salt and black pepper.

In a separate pan, melt the butter.

Lay one sheet of phyllo dough on a clean surface and brush with melted butter. Repeat with 5 more sheets.

Spread the sautéed vegetables evenly over the phyllo dough.

Crumble the feta cheese on top of the vegetables.

Roll up the phyllo dough tightly, tucking in the ends as you go.

Place the strudel on a baking sheet lined with parchment paper.

Brush the top with melted butter.

Bake for 25-30 minutes, until golden brown.

Allow to rest for 10 minutes before serving.
