  5. Add the rice to the pot and stir to coat it with the sofrito mixture.
  6. Pour in the water and season with salt and black pepper.
  7. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  8. Simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  9. Remove the pot from the heat and let it rest for 5 minutes.
  10. Fluff the rice with a fork and garnish with cilantro before serving.
