  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the apricots, granulated sugar, cornstarch, lemon juice, and vanilla extract.
  3. Roll out one sheet of pie crust and place it in a baking dish.
  4. Pour the apricot mixture over the crust.
  5. Roll out the second sheet of pie crust and place it on top of the apricot filling.
  6. Press the edges of the crust together to seal.
  7. Brush the beaten egg over the top crust.
  8. Sprinkle turbinado sugar on top.
  9. Cut slits in the top crust to allow steam to escape.
  10. Bake for 35-40 minutes, or until the crust is golden brown.
  11. Allow the pie to cool for at least 30 minutes before serving.
