Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.

Gradually add the flour mixture to the butter mixture, mixing well after each addition. Stir in the applesauce, oats, raisins, and walnuts.

Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until golden brown around the edges.

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
