  1. In a saucepan, bring water to a boil and add tapioca pearls. Cook for 15 minutes or until pearls are translucent. Drain and set aside.
  2. In the same saucepan, combine milk, sugar, vanilla extract, and cinnamon. Heat over medium heat until sugar dissolves.
  3. Add cooked tapioca pearls to the milk mixture and cook for an additional 5 minutes, stirring constantly.
  4. Remove from heat and let the mixture cool for 30 minutes.
  5. Peel and dice the apples.
  6. In a separate pan, sauté the diced apples with a tablespoon of sugar until they are soft and caramelized.
  7. Divide the tapioca pudding into serving bowls and top with the sautéed apples.
  8. Garnish with whipped cream and sprinkle with cinnamon.
  9. Serve chilled and enjoy!
