  1. Preheat the oven to 375°F (190°C).
  2. Roll out one pie crust and place it in a greased 9x13-inch baking dish.
  3. In a large bowl, combine sliced apples, granulated sugar, flour, cinnamon, lemon juice, and vanilla extract. Mix well.
  4. Pour the apple mixture over the pie crust in the baking dish.
  5. Roll out the second pie crust and place it on top of the apple mixture.
  6. Trim any excess crust and pinch the edges to seal.
