In a food processor, combine the flour, salt, cheddar cheese, and butter. Pulse until the mixture resembles coarse crumbs. Slowly add the ice water, 1 tablespoon at a time, until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a 12-inch (30 cm) circle. Transfer the dough to a 9-inch (23 cm) pie dish and press it into the bottom and sides.

In a large bowl, combine the green chiles, apples, sugar, cornstarch, cinnamon, and lemon juice. Mix well. Pour the apple mixture into the prepared pie crust.

Roll out the remaining dough into a 10-inch (25 cm) circle. Cut the dough into strips and create a lattice pattern on top of the pie. Brush the lattice with the beaten egg.
