Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the butter into small cubes and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the chopped apple and dried cranberries.
  6. Turn the dough out onto a lightly floured surface and knead it a few times until it comes together. Pat the dough into a circle about 1 inch (5 cm) thick.
  7. Use a sharp knife or a biscuit cutter to cut the dough into wedges or circles.
  8. Place the scones onto the prepared baking sheet and brush the tops with a little milk.
  9. Bake for 18-20 minutes, or until the scones are golden brown.
  10. Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
