Preheat the oven to 350°F (175°C).

In a large skillet, heat olive oil over medium heat. Add onion, red bell pepper, green bell pepper, celery, and garlic. Cook until vegetables are tender.

In a large bowl, crumble the cornbread and mix in the cooked vegetables, black beans, frozen corn, cumin, chili powder, salt, black pepper, fresh cilantro, and scallions.

Gradually add vegetable broth to the cornbread mixture until it reaches a moist consistency.

Transfer the mixture to a greased baking dish and bake for 30-40 minutes, or until golden brown on top.
