  4. Peel and core the apples, then chop them into small pieces. Add the apples, pecans, parsley, sage, salt, and pepper to the skillet. Cook for an additional 5 minutes, until the apples are tender.
  5. In a large bowl, whisk together the egg and vegetable broth. Add the toasted bread cubes and the cooked apple mixture. Stir well to combine.
  6. Transfer the stuffing mixture to a greased baking dish. Cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes, until the top is golden brown.
