  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt.
  3. In a large bowl, mix together the melted butter, granulated sugar, and brown sugar until well combined. Add the egg, molasses, and vanilla extract and mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Stir in the crystallized ginger.
  5. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the palm of your hand.
  6. Bake for 10-12 minutes, or until the edges are set and the cookies are slightly golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
