Apple and Cinnamon Sponge Pudding

Preheat the oven to 180°C (350°F).

Peel, core, and slice the apples.

In a saucepan, melt 100g of butter and add the sliced apples and 100g of caster sugar. Cook until the apples are soft.

In a separate bowl, cream together the remaining butter and sugar until light and fluffy.

Beat in the eggs, one at a time.

Sift in the flour and ground cinnamon, then fold in gently.

Stir in the milk and vanilla extract.

Spoon half of the batter into a greased baking dish.

Spread the cooked apples over the batter.

Spoon the remaining batter over the apples.

Bake for 40 minutes or until golden and cooked through.

Allow the pudding to rest for 10 minutes before serving.
