  1. Preheat the oven to 160°C (320°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine the rolled oats, desiccated coconut, plain flour, and sugar.
  3. In a small saucepan, melt the butter and golden syrup over low heat.
  4. In a separate small bowl, dissolve the baking soda in boiling water, then add it to the butter mixture.
  5. Pour the butter mixture into the dry ingredients and mix well.
  6. Drop tablespoonfuls of the mixture onto the prepared baking tray, leaving space between each biscuit.
  7. Bake for 12-15 minutes or until golden brown.
  8. Allow the biscuits to cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.
