  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, combine the grated zucchini, flour, sugar, oil, eggs, vanilla extract, baking powder, baking soda, cinnamon, and salt. Mix well.
  4. Fold in the walnuts.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes.
  8. Transfer the bread to a wire rack and let it cool completely before slicing and serving.
