Angel Thumbprints

Thumbprint cookies are believed to have originated in Sweden and are traditionally filled with lingonberry jam.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, cream together the butter and sugar until light and fluffy. Mix in the vanilla extract.

Gradually add the flour and mix until well combined.

Roll the dough into 1-inch balls and place them on the prepared baking sheet. Use your thumb to make an indentation in the center of each ball.

In a small bowl, whisk the egg yolks. Dip each dough ball into the egg yolks, then roll them in the chopped almonds.

Place a teaspoon of raspberry jam into the indentation of each dough ball.

Bake for 12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
