Preheat the oven to 180°C (350°F).

Press the tofu to remove excess moisture and cut into small cubes.

In a pan, heat olive oil and sauté onion and garlic until translucent.

Add mushrooms and spinach to the pan and cook until wilted.

Sprinkle flour over the vegetables and stir well.

Gradually add milk while stirring continuously to create a creamy sauce.

Season with salt and black pepper.

Add tofu cubes to the sauce and mix gently.

Transfer the mixture to a baking dish and sprinkle grated cheese on top.

Bake in the preheated oven for 20-25 minutes or until the cheese is golden and bubbly.
