Boil the potatoes until tender, then peel and mash them.

In a mixing bowl, combine the mashed potatoes, finely chopped onion, finely chopped green chilies, chopped coriander leaves, red chili powder, turmeric powder, cumin powder, and salt. Mix well.

In a separate bowl, mix the all-purpose flour with water to make a soft dough.

Divide the dough into small balls and roll them into small circles.

Place a spoonful of the potato mixture in the center of each circle.

Fold the edges of the circle to cover the filling and seal it properly.

Roll out the stuffed dough balls into flatbreads.

Heat a tawa or a flat pan and cook the parathas on medium heat until golden brown on both sides, using ghee or oil.

Serve hot with yogurt, pickle, or chutney.
